I crave this drink all summer. When the weather is hot and you want something really cold and refreshing, there is something so good about blending up a juicy watermelon with lemon, coconut milk and a little sea salt. It takes just a few minutes to make and is best served straight away over plenty of ice.
Watermelon already has such a high water content, which makes it perfect for a summer drink. I add a little coconut milk for a creamy texture and a subtle coconut flavour, while the lemon adds a fresh citrusy note. The small pinch of sea salt adds some sodium for hydration and helps bring out the natural sweetness of the watermelon.

I don’t always add the honey. If your watermelon is very ripe and sweet, you really don’t need it. I prefer this drink when it is lightly sweetened, so you can taste the fresh watermelon rather than making it taste like a sweet juice.

This is one of those recipes where the quality of the ingredients makes a big difference. Use a really ripe, juicy watermelon and serve the drink as cold as possible. If your watermelon has lots of seeds, simply strain the drink after blending for a smoother finish.
It is such an easy drink to make for a hot summer afternoon, and one I find myself coming back to again and again whenever watermelon is in season.
