There is something about dates and tahini together that just works, and I wanted to see how they would taste in an iced coffee. The dates add a gentle sweetness and the tahini makes the milk slightly richer and creamier, while the coffee ties everything together. It is a simple combination, but it makes a really delicious iced coffee.

The best part is that you don’t need any sugar or honey. The dates do all the sweetening here, and when they are blended with the milk, tahini and a little sea salt, they make a really lovely creamy base for the coffee.
The sea salt might seem like a small detail, but it helps balance the sweetness of the dates and brings out the flavour of the tahini. I recommend using soft Medjool dates as they blend much more easily and give you a completely smooth drink.

I like using strong coffee or espresso for this because it works so well with the date and tahini mixture. Pour it over plenty of ice and the cold date and tahini milk, give it a good stir and you have a really good iced coffee in just a few minutes.
You can also make the date and tahini milk ahead of time and keep it chilled in the fridge, so you can have everything ready to go when you want an iced coffee.

I really love how simple this is. A few ingredients, no added sugar and such a good combination of flavours.
