Melon and green tea are such a lovely combination, especially with fresh spearmint, lemon and a little honey. The ripe melon gives the tea a gentle sweetness and delicate fruity flavour, while the lemon keeps everything bright and refreshing. The mint adds a cool, fresh note that works particularly well with the sweetness of the melon.

I love how easy this is to make. Rather than making a melon syrup or using melon juice, you simply blend the ripe melon with lemon and honey directly in the jug or jar, then pour in the chilled green tea. There’s no juicing, no straining and very little washing up, and you get to use the whole fruit rather than just the juice.

It’s a nice change from the more familiar lemon or peach iced teas, while still being just as easy to make. I particularly love having a jug of this in the fridge during the summer, ready to pour over plenty of ice when the weather is really hot. The flavour is light and fruity without being overly sweet, making it an easy drink to keep coming back to throughout the day.

For the best flavour, use a ripe, sweet melon and adjust the honey depending on how naturally sweet it is. I like to add the ice just before serving, then finish with a few fresh spearmint.
